Description

The semi-seasoned goat caciotta is a semi-hard, medium-aged raw cheese of artisanal production. The milk comes from goats fed mostly on pasture and is processed with the traditional system. It is a cheese with a light and refined taste and a sweet and delicate flavour. Delicious with fresh summer fruit such as melon or watermelon; to be accompanied also with excellent honey or with pumpkin and onion compotes. To be combined with enveloping and full-bodied red wines such as Perricone, Nero d'Avola.

Since ancient times in Sicily goat breeding has been practiced from which to obtain dairy products, to date the ancient breeds are being protected, such as the Girgentana goat, in order not to make an excellent production disappear. Goat's milk is excellent for people who have problems digesting lactose, in fact it is easily assimilated and is very similar to human milk and represents a valid alternative to cow's milk. Goat's milk proteins are very similar to those of cow's milk and among the amino acids the highest content of taurine stands out, the same substance present in various energy drinks. It is rich in calcium, potassium, riboflavin and phosphorus.
