A Selection of the best olives of central-eastern Sicily, harvested by hand from 20 to 30 October, cold extracted within 12 hours after harvesting and immediately filtered and preserved in stainless steel containers, at a controlled temperature and in the absence of oxygen.

With a golden yellow color of good density and clear. To the olfaction it presents clean recall of almond, hay, tomato leaf, at bottom ripe citrus and aromatic herbs of sage and rosemary. A structured taste, well managed by phenolic tones, the spicy and bitter are very balanced and in good dose. Enhances a roast of veal and grilled vegetables, aubergine stuffed with baked minced meat.
